Rocky Road Bars

  • 12 graham crackers                           
  • 1/2 cup butter
  • 2 cups miniature marshmallows                            
  • 1/2 cup brown sugar
  • 1 cup semisweet chocolate chips              
  • 1 tsp. vanilla extract
  • 1/2 cup salted peanuts


Preheat oven to 350 degrees. Arrange graham crackers to cover bottom of a 15×10 inch pan. Sprinkle marshmallows, chocolate chips and peanuts over the graham crackers.  In a small saucepan, cook the butter and brown sugar to boiling. Remove from heat and add vanilla. Pour evenly over the ingredients in pan. Bake for 10 to 12 minutes in the preheated oven. Cool and enjoy.  Store in the refrigerator for 3 days or the freezer for 1 month.
